Vegetarian Recipes

These recipes should be fine as they are. If anything you make requires milk, just substitute for Goats milk ( WalMart/Sprouts). Do not worry about butter/cheese etc., use what you have.

If it calls for Rice  please use cous-cous ( Wal Mart) or Quinoa (at Sprouts)

If you make a soup or casserole that calls for chicken broth or cubes please use vegetable broth/cubes only.

No Soy please.

Feel free to substitute ingredients if you are not sure what the recipe is calling for. I just google to find substitution's.

Quinoa with Black Beans and Corn
 Ingredients:

1 cup cooked quinoa
1 can (15.5 oz) black beans, drained and rinsed
1 can (15.25 oz) sweet corn, drained  {I use frozen corn}
1 red bell pepper, diced
1/4 cup cilantro, chopped
3 Tbsp lime juice   {about 1/2 lime - I like a little more}
2 Tbsp olive oil
2 tsp ground cumin
Directions:
1. Cook quinoa. 
2.  Combine beans, corn, red bell pepper and cilantro in large bowl.  Stir in cooked quinoa.
3.  Combine lime juice, oil, cumin in small bowl.  Toss with quinoa mixture.  Season with salt and pepper to taste.  Serve warm or chilled.

Quinoa Black Bean Burgers

Aunt Suzie's Veggie Lasagne
1 box of lasagne noodles
1 large jar of natural Ragu
3 cups of feta cheese
3 cups of parmesean cheese
Mushrooms (1 large box)
2 zuchini's (yellow)
2 zuchini's (green)
Broccoli (1 large bunch)
1 package carrots ( shredded)
1 onion sliced

I softened all the veggies first in the micro in a little water ( about 5 minutes)
Boil lasagna noodles ( just till they bend- not well done)
Line 13x9 pan (first with sauce-enough to line the pan)
Cover pan with first layer of noodles
Cover with sauce
Generously cover with first layer of all vegetables
Sprinkle 1 cup of feta cheese- then cover with parmesan cheese
Place second layer of noodles- cover with sauce- then veggies- then both cheeses again
Place last layer of noodles - cover with sauce - veggies then end with both cheeses
Then-I wrapped and froze it! Bake (right from freezer) uncovered for about 1 to 11/2 hours on 350 degrees or till golden brown

Toddler Muffins- these were very good and easy on mt stomach. Had 2 of them before chemo and had no problems.
